Yield: about 6 dozen.
1 c (2 sticks) butter, softened
1 c sugar
1 c packed light brown sugar
1 egg
1-1/2 c all-purpose flour
1-1/4 c rolled oats
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 c flaked sweetened coconut

Cream butter and sugars in large bowl on medium until fluffy (~ 2 minutes). Beat in egg, mix well.

Combine flour, oats, baking powder, baking soda, salt, and coconut. Gradually add it to the creamed mixture with mixer running on low.

Roll into small balls. Place 2 inches apart on greased baking sheets. Flatten with a fork.

Bake at 375 degrees for 8 minutes or until lightly browned. Cool two minutes on baking sheet, then remove to wire racks to cool completely.
