MawMaw's Pinto Bean Pie

      • 1 can pintos (warm and mashed)
      • 3 c. sugar
      • 4 eggs
      • 2 sticks butter, softened
      • 1 c. chopped pecans
      • 1 small can coconut
      • 1 Tbsp. vanilla
      • 3 shallow pie shells


1.Preheat oven to 350 degrees F.

2.Beat the sugar and butter together until creamy.

Mix in the eggs and vanilla and then mix in the pinto beans until smooth.

By hand, stir in the pecans and coconut.

Pour mixture into pie shells and bake for 40-45 minutes.
