Mint Pistachio Pesto Salad!
Submitted by: Allyson Glazier, Special Collections This is one of my favorite recipes, it's adapted from a cooking magazine, I'd love for you to include it as a Rauner recipe!

Ingredients:

      • 1 cup fresh mint leaves
      • 1/2 cup pistachios
      • 1/4 cup grated parmesan cheese
      • 1 garlic clove (or more if you love your garlic)
      • 1/2 lemon, juice of
      • 1/2 cup olive oil
      • 1 lb orzo pasta, cooked, chilled or warm, depending on preference
      • 4 ounces feta
      • 1 cup chopped tomato

Directions:

1.Blend all pesto ingredients in food processor or blender *except oil.

2.Once ingredients are chopped together, drizzle in olive oil until blended.

3.Mix pesto with orzo, feta, and tomato. Serve!.
