|Mint Pistachio Pesto Salad!|

||This is one of my favorite recipes, it's adapted from a cooking magazine, I'd love for you to include it as a Rauner recipe!
- 1 cup fresh mint leaves
- 1/2 cup pistachios
- 1/4 cup grated parmesan cheese
- 1 garlic clove (or more if you love your garlic)
- 1/2 lemon, juice of
- 1/2 cup olive oil
- 1 lb orzo pasta, cooked, chilled or warm, depending on preference
- 4 ounces feta
- 1 cup chopped tomato
1.Blend all pesto ingredients in food processor or blender *except oil.
2.Once ingredients are chopped together, drizzle in olive oil until blended.
3.Mix pesto with orzo, feta, and tomato. Serve!.
