Tabbouli



Main Ingredients:
  • 1 cup bulgur wheat
  • 1 7/8 cups boiling water
  • 1 1/2 cups chopped parsley
  • 1 small cucumber, peeled and diced
  • 1/3 cup chopped leeks or green onions
  • 1/2 cup whole black olives (1/4 cup chopped)
  • 1/2 cup crumbled feta cheese
  • 1/2 ripe bell pepper, diced (optional)
  • 2 vine-ripened tomatoes, diced
    (optional, do not use canned or mass-produced tomatoes)
Dressing:
  • 1/3 cup extra virgin olive oil
  • 1 lemon, juiced (2 if not juicy)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh mint (2 tablespoons dried)


Put bulgur into large mixing bowl. Pour boiling water over bulgur. Cover, let stand 1 hour. Drain any excess water in colander, return to mixing bowl.

Add dressing ingredients, stir thoroughly.

Add remaining ingredients, mix well. Cover and chill at least 2 hours.

Makes 4 servings.
