Swiss Green Beans


Adapted from recipe in The Enchanted Broccoli Forest

  • 1½ lbs. green beans
  • 3 oz. swiss cheese
  • ¼ cup chopped ripe olives
  • 1 cup thinly sliced red bell pepper
  • ½ cup chopped toasted almonds (optional)
Dressing:
  • 5 tablespoons lemon juice
  • 2 large cloves garlic, crushed
  • ¼ cup olive oil
  • 1 tablespoon red wine vinegar
  • ½ teaspoon crushed tarragon
  • ½ teaspoon dried dill weed
  • 2 teaspoons dijon mustard
  • ½ cup freshly-minced parsley
  • ½ teaspoon salt
  • freshly ground black pepper to taste


Trim green beans. Cut cheese into thin strips.

Steam beans until just tender. Plunge into cold water and drain.

Combine dressing ingredients in a large mixing bowl. Mix thoroughly.

Add beans, cheese, olives, and bell pepper to bowl. Toss until well coated with dressing. Chill 2 hours or more.

Serve, topping with almonds (optional).

Makes 4 servings.
