Spice Cake

from The King Arthur Flour 200th Anniversary Cookbook

  • 1 1/2 cup whole wheat flour (or white whole wheat)
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla (optional)
  • 1/3 cup vegetable oil
  • 1 cup tomato juice
  • 1 cup grated carrot
  • 1 cup brown sugar

Put flour, salt, soda, and spices in a mixing bowl. Blend liquid ingredients and brown sugar in a separate bowl. Stir liquid ingredients into dry ingredients; don't overmix.

Pour into a lightly greased pan. Bake at 350° for 35 minutes.
