- 1 1/2 cup whole wheat flour (or white whole wheat)
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1/2 teaspoon nutmeg
- 1 teaspoon vanilla (optional)
- 1/3 cup vegetable oil
- 1 cup tomato juice
- 1 cup grated carrot
- 1 cup brown sugar
Put flour, salt, soda, and spices in a mixing bowl. Blend liquid ingredients and brown sugar in a separate bowl. Stir
liquid ingredients into dry ingredients; don't overmix.
Pour into a lightly greased pan. Bake at 350° for 35 minutes.
