Sourdough Pancakes or Waffles


Adapted from the King Arthur Flour 200th Anniversary Cookbook

  • 1 cup white flour
  • 1 cup whole wheat flour
  • 2 Tablespoons sugar
  • 2 cups buttermilk, slightly warmed
  • 1 cup sourdough starter
  • 2 eggs
  • 1/4 cup vegetable oil
  • 3/4 teaspoon salt
  • 1 teaspoon baking soda


Combine the flours and sugar in a large mixing bowl. Warm the buttermilk and blend it in.

Blend the sourdough starter into the flour/buttermilk mixture. Let this stand overnight.

The next morning, beat the eggs, oil, salt, and baking soda together and blend this into the sponge. Make either pancakes or waffles (or one one day and the other the next!) following your usual method.

Serves 4-6.
