Scallops in Black Bean Sauce


Adapted from Healthy Home Cooking

  • 2 tablespoons apricot preserves
  • 1/4 cup fresh lime juice
  • 1 1/2 tablespoons fermented black beans, rinsed
  • 1 tablespoon minced ginger root
  • freshly ground black pepper to taste
  • 1 lb. bay scallops
  • 1 tablespoon vegetable oil


To make sauce, mix the apricot preserves, lime juice, black beans, ginger, and black pepper in a small bowl. Set aside.

Warm a platter.

Rinse scallops. Heat oil in wok or heavy pan over high heat. When oil is hot, add the scallops. Stir fry scallops for 1 minute.

Add the sauce and continue stirring for 1 minute. Remove scallops with slotted spoon and place on heated platter.

Continue cooking sauce until it is reduced by half (1 or 2 minutes). Pour sauce over scallops and serve immediately.
