Rice Lentil Polou

Adapted from recipe in Laurel's Kitchen

  • 1 medium onion
  • 1 tablespoon vegetable oil
  • 1 1/2 cups brown rice
  • 2 cups chicken broth
  • 1 1/2 cups water
  • 1 1/2 tablespoons tomato paste
  • 1/2 teaspoon cinnamon
  • 3/8 cup lentils
  • 1 1/2 teaspoons salt
  • 3/4 cup raisins
  • 3/4 cup pine nuts

Chop onion and saute in oil in large saute pan until soft.

Add rice and stir for several minutes.

Mix tomato paste and cinnamon into water. Add this mixture, broth, and lentils to the pan. Bring to a boil, reduce heat to low, cover, and simmer for 30 minutes.

Remove pan from heat. Stir in salt, raisins, and pine nuts. If rice appears dry, add a little water.

Grease two small casserole dishes. Heat oven to 350 degrees. Bake covered for 25 minutes.

Makes 6 servings.
