Pumpkin Cake


  • 1 cup whole wheat flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 3/4 cup pumpkin purée
  • 1/6 cup oil (8 teaspoons)
  • 1/4 cup honey
  • 2 teaspoons molasses
  • 2 eggs, beaten
  • 1/4 cup raisins
  • 1/4 cup chopped walnuts

Place all ingredients except raisins and nuts in a large bowl. Beat on medium for 2 minutes; then fold in raisins and nuts.

Baked in an oiled 8x8" pan at 350° for 30 minutes.

Makes 8 servings.
