Potato and Snap Pea Sauté

  • 3/4 lb. new potatoes
  • 1/2 lb. sugar snap peas
  • 4 green onions
  • 2 cloves garlic
  • 1/2 tablespoon butter
  • 1/2 teaspoon nutmeg
  • 3 tablespoons chopped fresh mint
  • salt to taste
  • black pepper to taste


Cut potatoes in half. Trim pea pods. Slice green onions thinly. Mince garlic.

Boil potatoes 20 minutes or until tender. Add snap peas during last 2 minutes. Drain.

Heat butter in sauté pan over medium heat. Add green onions and garlic. Sauté 5 minutes. Remove from heat.

Add potatoes, peas, nutmeg, and mint. Toss to coat well. Season with salt and pepper to taste. Serve.
