Potato Curry

adapted from recipe in The Vegetarian Epicure

  • 6 medium potatoes
  • 1 1/2 tablespoons vegetable oil
  • 2 cups water
  • 1 cup plain yogurt
  • 2/3 cup frozen peas
Spices:
  • 1 teaspoon salt
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1 teaspoon turmeric
  • 1 teaspoon coriander
  • 1/2 teaspoon cayenne


Cut potatoes into 3/4" cubes.

Heat oil in sauté pan over medium heat. Add spices and stir 2 or 3 minutes. Add potatoes and stir continuously for about 5 minutes, coating potatoes evenly with spices.

Add the water, bring to a boil, reduce heat and simmer slowly for about 30 minutes, stirring occasionally.

Stir in yogurt and peas, heat another 5 minutes.

Serve over basmati rice.

Makes 4 servings.
