Moroccan Spice Mix
A colorful and aromatic spice mixture from Morocco
Recipe from Moosewood Restaurant Simple Suppers
- 2 tablespoons ground cumin
- 2 teaspoons cinnamon
- 2 teaspoons paprika
- 2 teaspoons turmeric
- 1/2 teaspoon cayenne pepper
- 1 teaspoon salt

Stir together all of the ingredients. Store in a well-sealed container.
Makes about 1/3 cup.
Variations: Substitute ground ginger for cinnamon and/or black pepper for cayenne pepper.
