Marie's Millet



  • 2 cups millet
  • 4 cups water
  • 1 teaspoon salt
  • 3 tablespoons butter
  • 5 3/4 oz. jar stuffed green olives
  • 8 oz. feta
  • 1/2 cup chopped fresh basil (can substitute parsley)
  • pepper to taste


Combine water, millet, and salt in a pot. Bring to a boil, reduce heat, simmer 25 minutes. Remove from heat. Add butter while millet is still hot.

Slice olives. Crumble feta.

Add olives, feta, and basil to millet. Mix well, adding pepper to taste.

Serve lukewarm or cold.
