Lime Shrimp Soup


Adapted from recipe in Practical Thai Cooking

Soup Base Ingredients:
  • 4 cups chicken broth
  • 2 teaspoons sake
  • 2 cloves garlic, crushed
  • 1 1/2 tablespoons fish sauce (nam pla)
  • 1/2 cup leeks, sliced
    (can substitute green onions in 1 1/2" lengths)
Goodies:
  • 1/2 lb. medium shrimp (raw, peeled)
  • 1/4 lb. mushrooms, quartered
Seasonings:
  • 2 tablespoons lime juice
  • 1/2 teaspoon red pepper flakes (scant)
  • 2 tablespoons chopped cilantro

Put all soup base ingredients in soup pot. Bring to a boil.

Add goodies. Boil 1 minute. Remove from heat.

Add seasonings. Serve immediately.

Makes 4 servings.
