Lemony Green Beans

From Moosewood Restaurant Simple Suppers

  • 1 lb. green beans
  • 1 lemon
  • 1 1/2 tablespoons olive oil
  • salt to taste
  • ground black pepper to taste

Wash and trim green beans.

Grate peel of lemon for zest, then juice the lemon. Whisk together lemon juice, lemon zest, salt, and pepper. Set aside.

Add enough water to a pot to cover green beans. Bring to a boil. Add beans and boil until just tender (3-5 minutes).

Drain beans and cut into 1 1/2 inch pieces. Dress with lemon mixture and toss. Serve.

Makes 4 servings, 85 calories each.
