Indian Meal Muffins


Adapted from the King Arthur Flour 200th Anniversary Cookbook

  • 3/4 cup white flour
  • 3/4 cup cornmeal
  • 3/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons cinnamon
  • 1 cup sourdough starter
  • 1/4 cup milk
  • 1 egg
  • 1/2 cup vegetable oil
  • 6 Tablespoons maple syrup

Preheat the oven to 500°.

Combine the dry ingredients in a mixing bowl. In a second bowl, beat together the starter, milk, egg, oil, and maple syrup. Blend the wet ingredients with the dry, taking about 20 seconds.

Fill the cups of a greased muffin tin about two-thirds full. Put the tin in the oven, turn the temperature down to 400°, and bake for about 20 minutes.

Makes 12 muffins.
