Coconut Rice


Adapted from recipe in Moosewood Restaurant Simple Suppers

  • 1½ cups white rice
  • 1½ teaspoons vegetable oil
  • ½ teaspoon turmeric
  • ½ teaspoon salt
  • 1½ cups water
  • ¾ cup light coconut milk


Rinse and drain rice.

Heat oil in pot over medium-high heat. Add rice, turmeric, and salt and sauté for 2 minutes.

Add water and coconut milk. Cover, bring to a boil, reduce heat, and simmer for 20 minutes.

Remove from heat and serve.

Makes 6 servings.
