Chickpea Fritters with Pepper Sauce


Adapted from recipe in Quick and Healthy Low-fat Cooking

Sauce:
  • 1 cup diced roasted sweet peppers
  • 1 tomato, diced
  • 1 clove garlic, minced
  • 2 teaspoons balsamic vinegar
  • 1/4 teaspoon honey
Fritters:
  • 1 3/4 cups rinsed canned chickpeas
  • 1 small sweet potato, peeled and shredded
  • 1/4 cup green onions, finely chopped
  • 1 tablespoon flour
  • 2 teaspoons lemon juice
  • pinch ground black pepper
  • 1 egg, beaten
  • 2 tablespoons olive oil


Combine sauce ingredients in bowl. Set aside.

Coarsely mash chickpeas in a medium bowl. Set aside.

In a large bowl, mix all fritter ingredients except for chickpeas, egg, and oil. stir in chickpeas and egg.

Heat 1 tablespoon of the oil in a large frying pan over medium-high heat. Drop rounded tablespoonfuls of fritter mix into pan. Cook 3 minutes, turn over, cook 3 more minutes. Transfer finished fritters to platter and keep warm. Continue, adding more oil as needed.

Serve with pepper sauce.
