Chayote with Onions



  • 2 chayote squash (1 1/2 to 2 lbs. total)
  • 3 onions (white or yellow)
  • 1 1/4 tablespoons vegetable oil
  • 1 heaping teaspoon oregano
  • garlic powder


Peel chayotes. Cut in half lengthwise. Remove seeds. Slice lengthwise into 1/4" thick slices.

Cut onions in half lengthwise. Slice lengthwise into 1/" thick slices. Separate layers.

Heat sauté pan over medium-high heat. When pan is hot, add oil. When oil is hot, add onions and oregano. Sauté until onion begins to brown, about 10 minutes.

Add chayote. Sprinkle with garlic powder to taste. Sauté 3 minutes. Reduce heat to medium, cover, and cook until chayote has softened. (This can take 10 minutes or more. Sprinkling with a little water will help it steam faster, but will reduce flavor somewhat.)

Remove from heat. Serve.

Makes 4 medium or 2 large servings.
