| ¼ c | melted butter |
| ½ c | maple syrup (not artifical, any grade OK |
| 4 | boneless skinless chicken breasts, halved and cleaned of fat |
| 1 tsp | grated lemon rind |
| 1 T | lemon juice |
| ½ tsp | salt |
| 1/8 tsp | pepper |
| ½ c | slivered almonds |
- Preheat oven to 375 degrees.
- Mix all but chicken and almonds.
- Use a small amount of the mixture to grease a baking dish large enough to contain chicken in a single layer.
- Add almonds to mixture.
- Place chicken in dish and pour mixture over.
- Bake uncovered 30-40 minutes at 375 degrees, basting once or twice.
- Serve over rice or pasta.
