Yield: 16 servings
1-2 pkg (10 oz) frozen chopped spinach 1/4 c onion, chopped
2 c cooked rice 2 tsp salt
2 c shredded cheddar or pepper jack cheese 1 tsp Worcestershire sauce
1-4 (I use 2) eggs, beaten (optional) 1 tsp ground thyme
2/3 c milk
1/4 c butter or margarine, softened

Make-Ahead plan

  1. Cook the spinach, squeeze out liquid. Wrap in paper towels and place in a plastic bag or container.
  2. Mix remaining ingreditents except cheese and rice.
  3. Cook rice.
  4. Shred cheese.
  5. Store all in refrigerator.
  6. Just before serving, mix all ingredients, pour into greased pan, cover and bake at 350 degrees for 25 minutes. Uncover and bake 5 minute more or until set.
