1-2 pkg (10 oz) | frozen chopped spinach | 1/4 c | onion, chopped |
2 c | cooked rice | 2 tsp | salt |
2 c | shredded cheddar or pepper jack cheese | 1 tsp | Worcestershire sauce |
1-4 (I use 2) | eggs, beaten (optional) | 1 tsp | ground thyme |
2/3 c | milk | ||
1/4 c | butter or margarine, softened |
- Preheat oven to 350 degrees. Grease a 13 x 9 baking dish.
- Cook spinach according to package directions; drain well, squeezing out excess liquid.
- Combine spinach with remaining ingredients in a large bowl.
- Pour spinach mixture into baking dish. Cover and bake 20 minutes. Uncover and bake 5 minutes more or until set.
Make-Ahead plan
- Cook the spinach, squeeze out liquid. Wrap in paper towels and place in a plastic bag or container.
- Mix remaining ingreditents except cheese and rice.
- Cook rice.
- Shred cheese.
- Store all in refrigerator.
- Just before serving, mix all ingredients, pour into greased pan, cover and bake at 350 degrees for 25 minutes. Uncover and bake 5 minute more or until set.
