As the name suggests, you can make this ahead of time and keep in the freezer until ready to serve.
Note: If you don't have day-old bread, you can arrange slices in a single layer on a large baking sheet and bake at 225 degrees until dry, about 30 minutes, turning over once half-way through.

| 10 slices | day-old french bread, 3/4" thick | 30 slices |
| 1 – 2 T | butter or margarine, melted | 3 – 6 T |
- Beat eggs, milk, sugar, vanilla and cinnamon.
- Place bread in a single layer in a baking dish.
- Pour egg mixture over bread. Let it soak for several minutes, turning once to coat it.
- Move bread to well-greased container, in single layer, not allowing slices to touch. Freeze until firm. Package in airtight containers.
- To bake, melt butter and preheat oven to 450 degrees.
- Place bread on well-greased baking sheet. Dot with melted butter.
- Bake 7 minutes. Turn and bake 10 – 12 minutes longer or until golden brown.
