Yield: 8 servings
| 6 c | fresh broccoli florettes |
| 1½ c | shredded Cheddar cheese |
| 1/3 c | chopped onion |
| 1½ c | mayonnaise |
| ¾ c | sugar |
| 3 T | red wine vinegar or cider vinegar |
| 12 | strips bacon |
- Cook & crumble bacon.
- Blanch broccoli briefly (immerse it in boiling water for 60 seconds). Immediately plunge into large bowl of ice water to stop cooking.
- Combine mayo, sugar, vinegar.
- Combine broccoli, cheese, and onion.
- Pour mayo mixture over broccoli & toss to coat.
- Refrigerate at least 4 hours.
- Just before serving, stir in the bacon.
