French breakfast radishes have an elongated shape and sweeter taste than their rounder counterparts. For extra crispness, soak radishes in ice water for 1 to 2 hours before using.

Note: I like to substitute cooked green beans or asparagus for the long green scallions, and have added corn to this recipe and liked it very much.

Salad Caramelized Sweet Onion Vinaigrette
16-oz pkg frozen black-eyed peas 1 large sweet onion, chopped (about 1 c)
8 green onions, washed and trimmed 1 T cooking oil
8 c mixed spring salad greens ½ c salad oil
2 c French breakfast radishes or small radishes, washed, trimmed, and cut in large pieces ½ c cider vinegar
coarse salt 1 T honey
¼ tsp salt
¼ tsp ground black pepper
