April in Paris

Frank, Ella & Louis and Monk have all been inspired by the beauty of “April in Paris. What could be better than a lyrical statement that captures the essence of Paris in bloom? This sentiment was epitomized at Dartmouth Dining Services’ Food Court on Thursday, April 23, with a dinner menu primarily of French fine food selections.

The evening’s culinary journey began with appetizers that included Escargot baked in garlic butter, Venison Bourguignon, and White Bean with Duck Confit soup. Entrée selections included tender Beef Short Ribs with red wine sauce and Candied Kumquats, Roasted Halibut with Crab & Sweet Corn, and Coq Au Vin. Side dishes included Israeli Couscous, Succotash, Crème Fraiche Gold Mashed Potatoes, and cooked Baby Carrots.

The elegant offerings at the dessert table included lightly whipped Chocolate Mousse served in a glass Flute, Crepes with Chocolate & Bananas, Raspberry & White Chocolate Brule, and Hazelnut Croquant. From the added touches of DDS staff wearing berets, the choice music selections, and the deliciously crafted French food, the spirit of Paris in spring was alive and well.
